I don’t’ know about you but I’m starting to get sick of eggs.
I’ve been eating them all week.
My kids coloured about 1 and a half dozen of them for Easter.
I’ve been making egg salad sandwiches with them all week and it’s only me eating them.
At least they are good for me.
I recall reading this article about eggs a while back.
Everyone thinks that the yolk is bad for cholesterol but it’s actually false.
There are some interesting nuggets of info in this article like:
“First of all, when you eat a food that contains a high amount of dietary cholesterol such as eggs, your body down-regulates its internal production of cholesterol to balance things out.
On the other hand, if you don’t eat enough cholesterol, your body simply produces more since cholesterol has dozens of important vital functions in the body.”
“There have been plenty of studies lately that indicate that eating whole eggs actually raises your good HDL cholesterol to a higher degree than LDL cholesterol, thereby improving your overall cholesterol ratio and blood chemistry.”
It goes on to talk about some other benefits of whole eggs as well as that they actually HELP you burn off body fat.
I’ve also noticed that my appetite is less eating these eggs rather then my usual lunch of leftovers.
